Wash, clean and chop the jackfruit. Boil the jackfruit for 10 minutes then sieve and dry it completely no moisture should be there.
Next dry roast the mention seeds except caraway seeds. Then grind into coarse powder.
Take a large mixing bowl add jackfruit, salt, turmeric powder , kashmiri red chilli powder and combine well.
In a pan add mustard oil and heat it until smoke comes out. Now cool it down completely and keep aside.
In a mixing bowl add freshly prepared pickle masala , caraway seeds ,mustard oil, citric acid with prepared jackfuit. Use dry laddle to combine very well.
Transfer the prepared pickle into sterlize jar and keep under sun for 5 days.
Tio : use only dry spoon , clean hand. Cover lid after every use, add mustard oil if required by heat it until smoke comes out and cool it down completely.
